#vegan #glutenfree vanilla protein overnight oats with yogurt and granola. I’ve been snacking on this over the past 4 hours at work and it’s keeping me full and energized!

Recipe (makes 2 pints):
1/3 cup regular oats (not quick cooking)
3 T vanilla protein powder (I used Genisoy brand)
2 tablespoons chia seeds
1 tsp apple pie spice
1 banana, peeled & mashed
1 cup vanilla coconut milk
1/4 tsp vanilla extract

Combine all ingredients in a bowl, cover, and refrigerate overnight. 

In the morning, layer your oats with the following:
Plain cultured almond milk (I used Amande brand), as needed
Vanilla almond granola, as needed
